Process

The process employed at Coastal Seafoods is designed to maintain the bacterial counts within the required ranges of food safety regulations. We have 6 Blast Freezers and 7 Contact Freezers along with 3 Flake Ice machines that produce in-house hygiene ice.

Fresh wild life sea captured seafood is iced and brought in covered vehicles in plastic crates. During the process of cleaning and processing, the raw material is kept in ice to maintain the required temprature. This material is then inspected organoleptically for quality. The samples are taken for microbiological analysis at every step of the process.

After reception and approval of the raw material, it goes through various stages depending on its type. Shrimps and Fish require distinct steps of processing that are defined below.

Processing of Shrimps

Shrimps are processed through the following steps

  1. Reception of raw material
  2. Deheading, Peeling & Grading/Chilling
  3. Filth Washing/Chilling
  4. Washing/Chilling
  5. Packing in bolytheme bags
  6. Storage
  7. Shipment

Processing of Fish

Fish is processed through the following steps

  1. Reception of raw material
  2. Washing/Chilling
  3. Filleting, Gutting/Chilling
  4. Grading
  5. Washing/Chilling
  6. Packing in polythene sheets
  7. Freezing
  8. Packing in master cartons
  9. Storage
  10. Shipment
